Spicy Ginger Soy Patty

Ingredients:
1 can (15.5oz) soy beans
¼ cup Olive oil
½ cup shredded carrots
1 small shallot
½ cup millet flour
1 tsp cumin
½ cup grated Jicama
1 egg white*
1-½tb grated ginger
1 tsp salt
2 tbs Bushelle Seasonings-Original
*Optional

Directions:
In a sauté pan, sauté cumin and shallots in olive oil on medium heat for 2 minutes.
In a mixing bowl mash soy beans with potato masher or folk, add carrots, flour, jicama, ginger, Bushelle Seasonings and salt, mix well.
Add sautéed olive oil, cumin and shallots to mixing bowl and mix well.
Spray sauté pan with cooking spray, cook at medium heat.
Form patties (2 tbls) and place in sauté pan. Cook patty on each side for 2 minutes or until golden brown. Serve with your favorite bread and garnishes.
